Make ajitsuke tamago, doneness to your preference. Store in fridge.
Make preferred sauce.
Preheat oven.
Prep meat mixture, form into patties, 1/4" - 1/2" thick, diameter per preference.
Pre-toast panko for breading, until golden brown.
Bread patties using breading.
Bake patties until done.Â
Plate. Patty, then egg, then sauce.
Garnish with thinly sliced spring onion.
Enjoy with any sides e.g. spicy menma, salted nori, bean sprouts with sesame oil...
