Medium firm tofu, 1x 14 oz box
Cubed
Coconut milk, 0.3x 400 ml can
Onion, 0.5x
Diced
Lemongrass, 1 sprig
Thinly shaved
Basil (Thai)
Chopped
Curry powder
Seasoning
Sauté onions and lemongrass until fragrant
Add mushrooms, sauté until soft-ish
Add coconut milk and tofu, salt, sugar, 0.5 tsp curry powder
Add basil, stir and simmer until desired thickness.
